Which insects are edible?

Some collect them, some run away from them, and still others dine on them. Edible insects (eating them is called entomophagy), as they are referred to, are still a taboo subject for many. Despite the fact that they are extremely nutritious and can be truly delicious. Those more adventurous have probably already tried the Asian bug delicacy. For that, the more conservative ones are probably well acquainted with the taste of midges, which are very fond of popping into our mouths while cycling and which are jokingly called “free protein.”

Which insects are edible? Which ones are worth reaching for in search of new taste sensations? Here’s a menu prepared by Floyd Shockley, head of entomological collections at the Smithsonian’s U.S. National Museum of Natural History.
